Ingredients (2.5 gallons)

3 lbs. Orange Blossom Honey
2.5 tsp Yeast Nutrient
2 tsp Acid blend
5 tablets Camden tablets
1 pkg. Red Star Pasteur Champagne yeast (7 gr.)
2.25 gallons 100% natural apple juice

O.G.: 1.078
F.G.: 0.995

Blend honey, acid blend, and apple juice thoroughly.
Add campden tablets.
After 24 hours, add yeast nutrient and yeast.

Racked to second on 08/20/95 - S.G. 0.995
Fermented 27 days in Second
Racked to third on 09/16/95 - S.G. 0.995
Fermented 25 days in Third
