Batch 29 - Peach Melomel

Ingredients (2.5 gallons)

6.5 lbs. Light Clover Honey
2 tsp Acid blend
2.5 tsp Yeast Nutrient
5 tablets Camden tablets
12 lbs. Fresh Peaches
1 pkg. Red Star
1.5 gallons Filtered tap water

O.G.: 1.105
F.G.: 0.995

Stone peaches and press out juice. (Yields bit over 1 gallon)
Dissolve honey in 1.5 gallons warm water.
Blend in peach juice, acid blend, and nutrients.
Add 5 campden tablets.
After 24 hours pitch yeast.
